***6th grade selling baked chips for $.75 during lunch.

***6th grade is selling chocolate lollipops during lunch for $1.

Founders Day Recap: Thank you to Elisa Kandel and Lorraine Solomon for their outstanding work in running a fantastic Reflections Program! And thank you Lori Dateno for being a wonderful Concert Parent – Mr. G’s 4th grade chorus rocked! Thank you to Joann in the Office for preparing our program and to Jack @ Jacklyn’s Cards and Gifts for donating our balloons for the evening. And Brooke and KarenLynn would like to thank everyone who came to Founders Day and supported our honorees. It truly was a fabulous evening.

SPRING FLING A/KA PARENTS NIGHT OUT:  It’s not too late to see your kids’ name in print – on the back of our souvenior T-shirt that is. $10 per name! And to get this wonderful T-shirt you must come to the party! Send your $$ in soon -- $40 gets you dinner, dessert and $10 in chips!

Why are we throwing this party you ask? Well, all the money we raise goes to fund the PTA Cultural Arts Program and various PTA sponsored events. Here is what PTA has brought to the school so far for the kids to enjoy:

Plus, PTA pays for and or contributes to the cost of various trips off of school grounds such as: 1st grade trip to Schmitts Farms, 3rd grade trip to the Vanderbilt Musuem, the 4th Grade trip to Benners Farm and the 6th grade Broadway Show trip, plus many others.

 

We are able to do all of this for the kids b/c of the great support we get from you, the parents. So let’s keep it up and everyone join us on March 16th @ Viva Loco for our Parents Night Out!

 

Stuffed Sweet Potatoes

4 medium sweet potatoes

1 tablespoon extra virgin olive oil (EVOO)

Salt and pepper

1/4 cup low fat buttermilk or yogurt

1/2 teaspoon sweet or smoked paprika

4-5 slices turkey bacon, chopped

1/2 cup extra-sharp cheddar cheese

3 scallions, sliced on the bias

Pre-heat the oven to 450˚F.

Place the sweet potatoes on a baking sheet and rub them with EVOO, salt and pepper. Bake until tender, about 35-40 minutes.
Halve the potatoes and scoop out about a third of the flesh of each into a medium size mixing bowl. Add the buttermilk or yogurt to the sweet potato flesh. Season with salt and paprika, then mash.

Fill the potato skins with the mashed potatoes and arrange the skins on a baking sheet. Place back into the oven for about 15 minutes, until the edges are slightly golden brown.
Meanwhile, cook up the bacon in a skillet until golden brown. Reserve on a paper towel-lined plate.

Remove the potato skins from the oven and sprinkle with the bacon, cheese and scallions. Serve two halves per person with a salad alongside.
